Pot Roast Meatloaf

How many times do you look in your pantry, or refrigerator, and wonder what on earth you are going to do with that package of ground beef?  You don’t want to spend a lot of time, and don’t have a bundle of ingredients to add, to make something fancy.  This recipe for Pot Roast Meatloaf is easy, quick, and frugal. It packs all the goodness of a pot roast meal into one pan by adding the meat and veggies all together.  This is a great way to stretch one pound of hamburger to be able to feed a family, or take as a casserole to a pot luck.  Just add a salad, some rolls, and dinner is on!

Here is what you need~

1 pound ground beef
1 can carrots, sliced 
1 can diced potatoes 
1 stalk celery, diced
1 1/2 tsp. onion powder
1 tsp. garlic powder
Salt and Pepper to taste
2 beaten eggs
1/2 cup italian seasoned bread crumbs
1/2 cup raw oatmeal

Here is how to make it~

Mix the ground beef, onion powder, garlic powder, salt, and pepper along with the beaten eggs.

Add the carrots, potatoes, celery, bread crumbs, oatmeal, and mix until well blended.

Press the mixture lightly into an oiled, 9 x13 pan.  Bake at 350 for about 40 minutes or until the meat is done in the center.
