delicious bananas have turned into black, spotted, mushy messes?
I think the first thought is, “throw them out”, or if you’re a Homesteader, “give them to the pigs”! And then the more frugal thought is probably, “I need to make Banana Bread”.
Well, there is more to be done with those bananas than bread, and this yummy cake
recipe will give you another alternative for your over ripe bananas! Hope you enjoy!
Banana Cake from One Ash Farm Recipes
1/2 cup butter,softened
1 cup sugar
4 TBS. Sour Cream
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. cream of tartar
1/8 tsp. salt
3 mashed bananas, or about 1 cup
Cream together the butter and sugar.
Add the eggs, sour cream and vanilla and mix until the eggs are thoroughly incorporated.
Sift the dry ingredients, and stir well into the creamed mixture.
Stir in the bananas.
Grease and flour a 9×13 pan, and pour in the cake batter.
Bake at 375° for 40 minutes or until golden brown.
Delicious topped with homemade Whipped Cream!
