Oatmeal Bread from One Ash Farm Recipes
1 cup oats, uncooked
1/2 cup wheat flour
1/4 cup light brown sugar
1 TBS. salt
1/2 cup vegetable oil
2 cups hot water
Mix all of the above ingredients and cool until lukewarm.
Dissolve 1 TBS. or 1 packet of active dry yeast in 1/2 cup lukewarm water.
Add this to the first mixture along with 1 cup unbleached flour.
Whisk together and allow this to set until it’s bubbly.
Add approximately 4 cups unbleached flour to make the dough smooth and elastic.
Place the dough in a greased bowl, covered with cheesecloth or a muslin cloth,
and let it rise until doubled.
Punch down the dough, flip it over, and let it double in size again.
Split the dough in 1/2, placing a portion in each of 2 greased loaf pans.
Allow the dough to rise until double in size.
Bake at 350° for 30 minutes or until golden.
