Pumpkin Cake with Maple Pecan Icing

pumpkin cakeWho doesn’t love fall and all the tastes it brings?! Everything pumpkin seems to be everywhere. This super easy (and did we mention delicious) recipe will help you create your own pumpkin dessert that tastes, and looks like, fall!!

The Cake:

-White or yellow cake mix
-2 eggs
-1 can pumpkin
-1/4 cup vegetable oil
-1/2 tsp cinnamon (more or less to taste)
-Dash nutmeg

1. Pour cake mix into bowl
2. In another bowl whisk all the other ingredients together until well blended
3. Add to cake mix and beat on medium speed for two minutes
4. Pour mixture into greased bundt pan (use a 9 x 13 if you want!)
5. Bake for about 40 minutes or until a toothpick inserted in the cake comes out clean
6. Cool about 15 minutes and invert onto your cake serving dish

The Frosting:

-1/2 container of store bought, ready to use, white frosting
-1 TBS maple flavoring
-1 TBS maple syrup
-1/3 cup finely chopped pecans

1. Put the frosting in a bowl and warm in the microwave for 15 seconds, or until fairly thin
2. Add the other ingredients and mix well until blended
3. Spoon evenly over the top of the cake, allowing the frosting to run down the sides (or simply frost the 9 x 13 cake)

Serve and enjoy!
