Homemade Cranberry Juice from One Ash Farm Recipes
1 bag fresh cranberries (I buy mine when on sale and freeze them!)
1/2 cup sugar
Water (to cover berries, then another 3 cups)
Place the cranberries into a sauce pan and generously cover with water.
Bring to a simmer and cook until they are softened, about 20 minutes.
(put a lid on your pan so they don’t splatter as they “pop”!)
Using a potato masher, mash the berries in the water to extract all the juice.
Pour the contents of the sauce pan into a cheesecloth lined strainer
or Foley Mill, over a bowl, to drain off the juice.
Pour the juice only back into the saucepan.
Add the sugar and 3 cups of water.
Bring to a boil, then cool slightly before pouring into jars or a pitcher.
This juice can be stored in the refrigerator, or frozen for future use.
