Anyone who has their garden going knows that when the
squash come in, there are a lot of them!
This is a quick and easy recipe for Mixed Squash Saute,
perfect as an addition to most any meal.

Mixed Squash Saute from One Ash Homestead
4 medium size young squash- zucchini, straight neck yellow or similar squash
2 TBS. Lard or Olive Oil
2 TBS. Lemon Juice
Sea Salt
Black Pepper
Basil
Slice the squash evenly, about 1/4 inch thick.
Heat the oil, then add the squash slices.
Drizzle with Lemon Juice.
Sprinkle with Salt, Pepper, and Basil to taste.
Saute on a medium-high heat, turning as needed,
until grilled and still slightly crisp.
This is a great side dish for roasted chicken, or with rice as a part of a fresh veggie meal!
