How many times have you looked at the fruit bowl and realized that your perfectly
delicious bananas have turned into black, spotted, mushy messes? Or maybe those dreaded fruit flies are starting to surround them and invade your kitchen. If you are like me, the first thought is, “throw them out”! Or maybe, if you’re a Homesteader, you say “give them to the pigs”! We even have goats that will eat bananas, peel and all!
But then the more frugal thought is probably, “I need to make Banana Bread” but then you think…. I just don’t have time right now. If you’ve ever tried it, or read about it, you remember…..I can put those in the fridge until I’m ready to bake with them. Or maybe I can even freeze them. It doesn’t matter if they turn black….they’ll just be used for baking, right? I have tried this before. It does work. The bananas turn black, but it’s okay. Until you realize that there are bananas everywhere…..in the bowl on the counter, in the fridge and in the freezer!
Well I am here to tell you, there is more to be done with those bananas than just banana bread. You can go ahead and store them in the fridge or the freezer until you have time. And when you’re ready you are going to want to try this yummy Amish Banana Cake
recipe.
This Amish Banana Cake is not too sweet and will give you another alternative for your over ripe bananas. This cake is very easy to prepare and you can make it “as is” or you can dress it up by adding some chopped pecans or walnuts. The cake can be made ahead and frozen, or eaten when just cooled out of the oven. We like it topped with whipped cream to keep it light, but you could use a typical frosting to make it a little sweeter. You could also just keep the cake unfrosted and top it with softened ice cream. What a treat that would be!
So get creative with those over ripe bananas. Try out this basic recipe, change it around to make it your own, and create a new family favorite!

Amish Banana Cake from One Ash Homestead
1/2 cup butter,softened
1 cup sugar
2 eggs
4 TBS. Sour Cream
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. cream of tartar
1/8 tsp. salt
3 mashed bananas, or about 1 cup
Cream together the butter and sugar.
Add the eggs, sour cream and vanilla and mix until the eggs are thoroughly incorporated.
Sift the dry ingredients, and stir well into the creamed mixture.
Stir in the bananas.
Grease and flour a 9×13 pan, and pour in the cake batter.
Bake at 375° for 40 minutes or until golden brown.
Delicious topped with homemade Whipped Cream!
