How many times do you look in your pantry, or refrigerator, and wonder what on earth you are going to do with that package of ground beef? You don’t want to spend a lot of time, and don’t have a bundle of ingredients to add to make something fancy.
Or, you get so busy that you forget to prepare something early in the day for dinner? This seems to happen to me a lot! That’s why I am always trying to come up with easy one-pot meals. Things that are quick to put together, and can just sort of cook on their own while I keep doing other things.
This recipe for Pot Roast Meatloaf is easy, quick, and frugal. It packs all the goodness of a pot roast meal into one pan by adding the meat and veggies all together. This is a great way to stretch one pound of hamburger to be able to feed a family, or take as a casserole to a pot luck. Just add a salad, some rolls, and dinner is on!
Here is what you need~
1 pound ground beef
1 can carrots, sliced thin
1 can diced potatoes (dice them small)
1 stalk celery, diced
1 1/2 tsp. onion powder
1 tsp. garlic powder
Salt and Pepper to taste
2 beaten eggs
1/2 cup italian seasoned bread crumbs
1/2 cup raw oatmeal
Here is how to make it~
Mix the ground beef, onion powder, garlic powder, salt, and pepper along with the beaten eggs.
Add the carrots, potatoes, celery, bread crumbs, oatmeal, and mix until well blended.
Press the mixture lightly into an oiled, 9 x 13 pan. Bake at 350 for about 40 minutes or until the meat is done in the center.
