When I woke up early this morning and saw that the thermometer outside
was reading 37°, I was sure glad that I had put a big crock pot full
of brown beans and pork on to cook overnight! These warm beans
and flavorful pork will be a great comfort food, along with some
cornbread, on this cold day.
I have been eating brown beans all my life. One of the things we could
always count on when we were at my Mimi’s house was that she would
have a big batch of brown beans cooking in the deep well of her stove.
I can still remember that smell, and how good that simple meal would taste.
Beans are one of the best foods for long term storage, but they won’t do
you any good if you don’t know how to cook them! Cooking them low and slow will help
ensure you have a tender, yet firm, bean once cooked.
This recipe uses a crock pot, but the general concept is the same for stove top cooking.

Brown Beans and Pork from One Ash Homestead
1 bag of brown (pinto) beans (I buy 2 lb. bags)
2-3 cups of leftover pork roast or ham
1/2 tsp.salt
1/4 tsp. pepper
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. cumin
Sort the beans into a large bowl, picking out any stones or dark, small beans
Put enough water over the beans to cover them by about 2-3″
Cover the bowl with plastic wrap and soak for 6-8 hours
Pour the beans into a strainer and rinse off the soak water.
Place the beans into your crock pot, filling the pot about 1/2 full of beans
Add enough chunked or shredded pork to fill the pot to about 2/3 full
Add salt and pepper, onion powder, garlic powder and cumin
(you can add more or less seasonings to taste)
Cover the mixture with water to 1/2″ below the rim of your crock pot
Stir gently to mix the ingredients
Cook on low for 7-8 hours and enjoy!

These sound delicious! I have never made brown beans. We're having pork roast later in the week so I will be good to go.
