Do you plant corn in your garden? We have always planted a small section, just enough to enjoy some sweet ears doused in butter. But this year, Mags used her horsepower to plow up and plant a new, much larger area for those sweet Ambrosia ears. And boy, oh boy, have we grown some corn!
As the one who gets to play with all of that delicious fresh produce when it’s harvested, I had a challenge ahead! For the last week, I have been up to my ears (pun intended) in corn.
I know many of you would just throw those ears in the freezer, cob and all, and eat them later. Or you would get out all the canning tools and put them up in canning jars. Well, those full ears take a lot of freezer space that I don’t have, and I have not learned the art of pressure canning, (yes, I’m afraid it will blow up!). So my best alternative was to get the kernels off the ears and freeze them. I was able to borrow the absolute best tool from a friend (the Zyliss Corn Stripper– see it here) and off came the kernels. I now have a great supply of corn packaged in quart size bags, ready for the winter. I was even able to make a gallon of corn salsa for us to enjoy as we work!
