We are so blessed to live in South Carolina Peach Country! It is such a thrill to drive just a few miles to buy fresh, sweet peaches in colorful 1/2 bushel boxes, right from the growers. When I bring those boxes into my kitchen a whole world of peach opportunity opens up! They can be frozen, cooked into pies, made into jam, and most of all just eaten!
Here are two of our favorite recipes for peaches- Peach Goodie, and our recipe for Freezer Peach Pie Filling (which can be used next winter to make Peach Goodie!). I hope you enjoy!
Freezer Peach Pie Filling from One Ash Farm Recipes
12 cups peeled, pitted, and sliced peaches
3/4 tsp. Salt
2 1/4 cup sugar
7 1/2 TBS. Flour
2 1/2 tsp. Cinnamon
3 TBS. Lemon Juice
Mix all ingredients together.
Spoon gently into gallon size freezer bags, filling the bags about 1/2 full.
Lay the bags flat on a cookie sheet and freeze until solid. Freezing them like this makes them easy to stack and store in the freezer!
To use, simply thaw, and use for any pie or cobbler recipe!
This recipe can easily be divided or doubled to accommodate your peach supply.
