Do you need a quick and delicious cookie recipe? This oldie but goodie from One Ash can help you out!
Last night, I wanted an easy (but yummy) dessert to make. I never know exactly what I want, but I know I want “a little something sweet on my tummy”, as my MiMi used to say! So I started pondering recipes in my favorite cookbooks (I adore Amish Cookbooks- click HERE to see some!). I still wasn’t quite sure what I wanted to make, but I was started to think “cookies“. After digging around on other places like Pinterest and food.com, I finally found a perfect recipe. Snickerdoodles! The only problem? I didn’t have all the ingredients I needed. What was I going to do?
How many times has this happened to you? I know I can be somewhat stubborn- when I get my mind set on something, especially food, I get determined to figure it out. Since I was pretty desperate to make snickerdoodle cookies, I came up with an idea, changed a few things, and figured out how to get my cookies!
I do have to say that sometimes that creative stubborness pays off- and it sure did this time, because these cookies came out marvelous! This is going to be a recipe, and possibly a cookie base, for many other cookies to be baked at One Ash!

Ingredients:
1 box of White Cake Mix- any brand, cheap works great!
1/4 cup melted butter
1/4 cup shortening
1 egg, beaten well
1 Tbs sugar
1 tsp ground cinnamon
(makes about 50 medium sized cookies)
Directions:
- Go ahead and preheat your oven to 350 degrees. Take out your cookie sheets and grease them. Set these aside.
- In a medium size mixing bowl, mix together the white cake mix, melted butter, shortening and well beaten egg until a bread-like dough forms. Make sure all the ingredients are well blended.
- In a seperate small bowl, mix together the sugar and cinnamon.
- Shape the dough from the first bowl into 1/2″ balls.
- Roll the balls in the sugar and cinnamon mixture, making sure the entire thing is well covered.
- Place the cookie dough balls about 2 inches apart on a cookie sheet. But, before you put the cookies in the oven, take a fork and smash each ball down flat, creating the criss-cross pattern on top of the cookie. (I like this pattern, but you could also use the smooth bottom of a glass for a different look)
- Bake for about 10 minutes, or until golden brown.
- Immediately remove the cookies from the cookie sheets and let cool on wire racks for about 5 minutes.
- Enjoy with a nice big glass of cold, fresh milk!
Think about this- add some chopped nuts, make a simple maple frosting to go on top of the cookies, how about adding chopped figs or raisins? Or…..maybe you could substitute pumpkin for part of the shortening? I haven’t tried any of these ideas, but it’s fun to think about ways to make recipes different. Just understand the concept and then the sky is the limit!
