When you get ready to harvest your potatoes we sometimes end up with more than we can handle. So one of the ways we have dealt with this issue is you can either jar them or freeze them. We have had great success freezing ours and we have been able to enjoy them all winter long. Try this and maybe you to can have a large harvest of potatoes that can last you a long while.
Freezing potatoes?
If you have ever wondered what to do with those extra potatoes that are about to sprout, here is the answer!
Freeze them!
Yes, you can freeze potatoes when they are shredded, french fried or diced.
The trick?
Once cut, soak them in cold water, rinse, and soak and rinse again.
Lay on a tray lined with paper towel a few minutes to dry them.
Put in plastic bags and freeze.
Your potatoes will remain firm and ready to cook!

What a neat trick! I didn't realize you could freeze them…. but if you think about it, I do recall seeing frozen raw potatoes at the grocery store. š
